Ingredients: 

  • 2 medium eggs 
  • 1 small tomato, chopped
  • 2 tsp olive oil 
  • ½ cup arugula leaves 
  • 2 pinches salt 
  • 2 pinches ground black pepper 
  • 2 tbsp heavy cream, 36% fat
  • 1 slice low-carb bread
  • 2 tbsp grated cheddar cheese

Instructions: 

  1. Whisk the eggs with heavy cream, a pinch of salt, and a pinch of ground black pepper in a bowl. 
  2. Heat the pan with half the olive oil over medium heat. Pour the egg mixture and let it sit for a few minutes. Lower the heat and continue to cook until the egg mixture cooks through. 
  3. Top the omelet with cheddar cheese. Let it sit for 1 minute or until the cheese melts, and slide it onto a serving plate. 
  4. Arrange the salad: add arugula and chopped tomato on the side. Drizzle the remaining olive oil over the vegetables and sprinkle with salt and ground black pepper. Serve with low-carb bread, and enjoy!
