Cheesy Garlic Mashed Cauliflower Recipe

Ingredients: 

  • 1 clove garlic, minced
  • 1½ cup cauliflower florets 
  • ⅓ cup parmesan cheese, grated
  • 2 pinches salt 
  • 2 pinches ground black pepper 
  • 2 tbsp cream cheese, 34% fat 
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp olive oil

Instructions: 

  1. Place the cauliflower in a steamer (or use a pot with a metal strainer or colander) over boiling water and steam for 8-10 minutes or until tender. Remove from heat and drain thoroughly.
  2. While the cauliflower is cooking, heat the olive oil in a saucepan over medium heat. Add the minced garlic and cook for 1-2 minutes or until the garlic begins to turn golden.
  3. Remove from heat and transfer to a food processor along with the steamed cauliflower, grated parmesan, and cream cheese. Season to taste with salt and ground black pepper. Feel free to adjust the seasoning to taste or use other favorite spices instead.
  4. Blend until the cauliflower is smooth. Add a little boiling water if the consistency is too thick.
  5. Serve in a bowl and sprinkle with chopped parsley. Enjoy!

*NOTE: Feel free to use frozen cauliflower.
