Cheesy Chorizo and Spinach Omelet Recipe

Ingredients:

  • 1 tbsp olive oil
  • 2oz/60g chorizo
  • ½ small red onion, diced
  • 2 large eggs
  • 2 tbsp heavy cream
  • ¼ cup baby spinach, chopped
  • 1oz/28g shredded cheddar cheese
  • Salt and pepper to taste

Toppings:

  • 1 tbsp cream cheese
  • ¼ avocado, diced
  • ½ cup cherry tomatoes, halved

Instructions:

  1. Heat the olive oil in a medium-sized frying pan and cook the chorizo, stirring frequently.
  2. Add the onion to the pan and cook while stirring until the onion is soft.
  3. Meanwhile, in a bowl, whisk together the eggs and heavy cream.
  4. Remove the chorizo and onion from the pan and set aside.
  5. Pour the egg mixture into the same frying pan and cook at low to medium heat until the egg is almost set.
  6. Add the spinach to half the omelet and cover with a lid until wilted, then add the chorizo and onion, and top with shredded cheese.
  7. Fold one side of the omelet over the other and place it on a plate.
  8. Top with cream cheese, avocado, and cherry tomatoes.
