The sharp flavor of cheddar cheese is the perfect pair to cauliflower’s nutty, sweet profile. 

Ingredients for 2 servings:

  • ½ cauliflower florets, chopped
  • ½ cup cheddar cheese, shredded
  • ½ cup half-and-half, or ¼ cup milk + ¼ cup heavy cream
  • ¼ cup sour cream
  • 1 tbsp green onions, chopped
  • Ground black pepper, to taste
  • Salt, to taste

How to prepare:

  1. Preheat the oven to 350°F/175°C.
  2. In a pot or microwave, steam the cauliflower florets for up to 5 minutes until tender. Strain to get rid of excess moisture.
  3. While the cauliflower is steaming, in a saucepan over medium heat, add the half-and-half mixture and sour cream, then add the seasonings and shredded cheese. Mix until smooth.
  4. Bring the cheese sauce to a boil, then turn off the heat.
  5. Pour it over the cauliflower into a baking dish.
  6. Bake in the oven for 10 minutes. Then, top with extra cheese and bake for another 5 minutes.
  7. Allow to rest for 5 minutes and enjoy the keto lunch immediately or store it for meal prep.
