Cheese and Vegetable Fondue Recipe

Just swap out the bread for low-carb veggies, and you, too, can have a dip.

Ingredients: 

  • ⅓ small broccoli 
  • 1 clove garlic, minced 
  • 140g/4.9oz cheddar cheese
  • 2 pinches ground black pepper 
  • 1 pinch ground nutmeg 
  • 1 pinch mustard powder 
  • 80g/2.8oz mushrooms

Instructions: 

  1. Fill a medium-sized pot with 2 cups of water.
  2. Add the halved mushrooms to a colander or steamer the size of your pot, cover with a lid, bring to a boil, reduce to a simmer, and steam for 5 minutes.
  3. Chop the broccoli and add to the colander with the mushrooms. Steam for another 5 minutes.
  4. Meanwhile, place the cheese in a medium saucepan (you can use a fondue set if you have one) and melt over low heat for 5–10 minutes. Add 2–3 tablespoons of water for consistency if desired.
  5. Add garlic, mustard powder, ground black pepper, and nutmeg. Stir well and continuously.
  6. Transfer cheese to a bowl (keep melted cheese warm to maintain consistency) and arrange cooked and drained vegetables on top. Enjoy!

*NOTE: Feel free to use frozen vegetables.
