Fill a large mushroom with sausage and cheese for a satisfying keto lunch or dinner. Very low in carbs and high in fat, it’s the perfect keto-friendly cheat meal or addition to your dirty keto menu.
Ingredients:
- 1 large portobello mushroom
- 1 tsp olive oil
- 1 pork sausage
- ¼ medium onion, diced
- 1 clove of garlic, crushed
- 1 sprig of fresh thyme (or ½ tsp dried thyme)
- ¼ cup mozzarella cheese
- ¼ cup cheddar cheese
- Salt and pepper to taste

Instructions:
- Preheat oven to 450℉ (230℃ ).
- Remove the stem and gills from the mushroom, chop the stem, and set aside.
- Drizzle the olive oil over the top of the mushroom, and place it on a baking tray lined with baking paper.
- Cook the sausage in a small frying pan over medium heat until cooked through and browned. Remove from the pan.
- Add the onion, garlic, thyme, chopped mushroom stem, and mushroom gills to the pan and cook until the onion is soft.
- Cut the sausage into small bite-sized pieces and return them to the pan. Remove the thyme and stir to combine the sausage, onion, and mushroom. Season to taste with salt and pepper.
- Cover the bottom of the inside of the mushroom with mozzarella cheese and spoon the sausage mixture over it. Top with shredded cheddar cheese.
- Place the baking tray into the preheated oven and bake for about 25 minutes, until the cheese is melted and the mushroom is cooked.
- Remove from the oven, slice, and serve.
