Keto Cheese and Sausage Stuffed Mushrooms Recipe

Ingredients:

  • 1 large portobello mushroom
  • 1 tsp olive oil
  • 1 pork sausage
  • ¼ medium onion, diced
  • 1 clove of garlic, crushed
  • 1 sprig of fresh thyme (or ½ tsp dried thyme)
  • ¼ cup mozzarella cheese
  • ¼ cup cheddar cheese
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 450℉ (230℃ ).
  2. Remove the stem and gills from the mushroom, chop the stem, and set aside. 
  3. Drizzle the olive oil over the top of the mushroom, and place it on a baking tray lined with baking paper. 
  4. Cook the sausage in a small frying pan over medium heat until cooked through and browned. Remove from the pan.
  5. Add the onion, garlic, thyme, chopped mushroom stem, and mushroom gills to the pan and cook until the onion is soft. 
  6. Cut the sausage into small bite-sized pieces and return them to the pan. Remove the thyme and stir to combine the sausage, onion, and mushroom. Season to taste with salt and pepper.
  7. Cover the bottom of the inside of the mushroom with mozzarella cheese and spoon the sausage mixture over it. Top with shredded cheddar cheese.
  8. Place the baking tray into the preheated oven and bake for about 25 minutes, until the cheese is melted and the mushroom is cooked.
  9. Remove from the oven, slice, and serve.
