If you’re tired of eating cauliflower rice over and over again, try these equally healthy cauliflower tortillas. You can pair them with other keto recipes, like pesto chicken!

Ingredients for 6 tortillas:

  • 1 large head of cauliflower
  • 2 eggs
  • ½ tsp salt
  • ¼ cup cheese
  • Almond flour
  • Freshly ground pepper, to taste

How to prepare:

  1. Chop the cauliflower and pulse it in a food processor until riced.
  2. Let it steam for 5 minutes, then set aside until cool.
  3. Transfer into a cheesecloth and squeeze out the moisture.
  4. In a bowl, add the cauliflower, eggs, cheese, salt, and pepper. Add almond flour until dry.
  5. Divide the tortilla mixture into 6 equal balls and press them into a flat circle.
  6. Preheat your oven to 375°F/190°C.
  7. Place in the oven on a baking tray for 15 minutes. Then flip and bake for 10 minutes. Allow it to cool.
  8. Heat a lightly-oiled non-stick pan over medium heat. Toast the tortillas on both sides before serving this low-carb tortilla with other keto-friendly recipes.
