Cauliflower Rice With Chicken and Veggies Recipe

Ingredients: 

  • 3 tbsp olive oil
  • 2 pinches salt
  • 2 pinches ground black pepper
  • 100g/3.5oz chicken breast, raw
  • ½ small tomato, wedges
  • ½ medium bell pepper, chopped
  • 2 cloves garlic, minced
  • ¾ cup cauliflower, florets
  • 2 tbsp fresh cilantro, chopped

Instructions: 

  1. Add cauliflower florets into a food processor and pulse until the mixture resembles rice.
  2. Heat half of the olive oil in a pan or wok over medium-high heat. Add the chicken pieces and season with salt and ground black pepper. Cook for 5–6 minutes, occasionally stirring until chicken is golden and cooked through.
  3. Remove chicken from the pan, set aside, and cover to keep warm.
  4. Heat the remaining olive oil in the same pan. Add the garlic and saute for about 1 minute, until fragrant. Add bell pepper and cauliflower rice and cook for 2–3 minutes until cooked through.
  5. Place tomato wedges, chicken, and cauliflower rice with bell pepper onto a plate. Sprinkle chopped cilantro on top. Enjoy!
