Ingredients: 

  • 1 clove garlic, minced 
  • ¾ cup cauliflower florets 
  • ⅓ cup parmesan cheese, grated 
  • 1 tbsp olive oil 
  • ¼ cup almond flour 
  • 1 medium egg 
  • 2 pinches salt 
  • 2 pinches ground black pepper 
  • 2 tbsp Greek yogurt, 4% fat 
  • ⅓ cup water

Instructions: 

  1. In a food processor, combine garlic, cauliflower florets, water, parmesan cheese, almond flour, egg, salt, and ground black pepper. Process until well combined. Adjust the batter consistency by pouring more water.
  2. Heat the olive oil in a non-stick frying pan over medium heat. Add some batter to form pancakes and cook for a few minutes on each side until golden brown.
  3. Serve the cauliflower pancakes with Greek yogurt on a plate. Enjoy!
