Whip up a batch of low-carb, savory cauliflower pancakes. They are perfect served with Greek yogurt for breakfast, lunch, or dinner on a vegetarian keto diet.
Ingredients:
- 1 clove garlic, minced
- ¾ cup cauliflower florets
- ⅓ cup parmesan cheese, grated
- 1 tbsp olive oil
- ¼ cup almond flour
- 1 medium egg
- 2 pinches salt
- 2 pinches ground black pepper
- 2 tbsp Greek yogurt, 4% fat
- ⅓ cup water

Instructions:
- In a food processor, combine garlic, cauliflower florets, water, parmesan cheese, almond flour, egg, salt, and ground black pepper. Process until well combined. Adjust the batter consistency by pouring more water.
- Heat the olive oil in a non-stick frying pan over medium heat. Add some batter to form pancakes and cook for a few minutes on each side until golden brown.
- Serve the cauliflower pancakes with Greek yogurt on a plate. Enjoy!
