It’s a comforting and delicious keto-friendly version of mac and cheese, without sacrificing the richness and creaminess of the traditional version.

Ingredients:

  • 1 head cauliflower, finely chopped
  • 1 cup cheddar, shredded
  • 1/2 cup mozzarella, shredded
  • 1/4 cup heavy whipping cream
  • 1/4 cup milk
  • 2 tbsp olive oil
  • 1 tbsp unsalted butter
  • Salt, to taste
  • Black pepper, to taste

Instructions:

  1. Preheat your oven to 450°F/230°C.
  2. Mix the cauliflower, oil, salt, and pepper in a bowl until the florets are well coated.
  3. Put the cauliflower on a baking sheet and roast for 15 minutes.
  4. Add your cheeses, heavy cream, butter, and milk to a saucepan over low heat. Stir regularly until smooth.
  5. Add cauliflower to a bowl and pour sauce over it.
