This is a great low-carb meal prep option that makes four servings.
It’s a comforting and delicious keto-friendly version of mac and cheese, without sacrificing the richness and creaminess of the traditional version.

Ingredients:
- 1 head cauliflower, finely chopped
- 1 cup cheddar, shredded
- 1/2 cup mozzarella, shredded
- 1/4 cup heavy whipping cream
- 1/4 cup milk
- 2 tbsp olive oil
- 1 tbsp unsalted butter
- Salt, to taste
- Black pepper, to taste
Instructions:
- Preheat your oven to 450°F/230°C.
- Mix the cauliflower, oil, salt, and pepper in a bowl until the florets are well coated.
- Put the cauliflower on a baking sheet and roast for 15 minutes.
- Add your cheeses, heavy cream, butter, and milk to a saucepan over low heat. Stir regularly until smooth.
- Add cauliflower to a bowl and pour sauce over it.
