Cauliflower Mac and Cheese Recipe

The good news is, you can substitute it with cauliflower and enjoy low-carb mac and cheese, perfectly suitable for keto. 

Ingredients:

  • 1 head of cauliflower (about 1lb/450g)
  • 2 tbsp olive oil
  • Salt and pepper
  • ½ cup heavy cream
  • ½ cup cheddar cheese, grated
  • ½ cup gruyere cheese, grated
  • ½ cup mozzarella cheese, grated
  • ½ cup high-fat milk
  • 4 slices bacon, cooked till crisp
  • 2 tbsp parsley, chopped

Instructions: 

  1. Cut cauliflower into small florets. 
  2. In a baking pan, toss the cauliflower with olive oil, salt, and pepper.
  3. Bake in a preheated 425⁰F/220⁰C oven for 15–20 minutes or till just about done. 
  4. In a heavy saucepan, pour in the heavy cream. 
  5. Put on medium heat for 5 minutes. 
  6. Add the three cheeses and the milk and stir on low heat till the cheeses have melted. 
  7. Put the cooked cauliflower in a bake-and-serve dish.
  8. Spoon in the cheese sauce and toss to coat. 
  9. Bake further in a preheated 425⁰F/220⁰C oven for 10 minutes or till bubbly.
  10. Garnish with crumbled bacon and parsley.
