  • 2 tsp butter
  • 1 tbsp chopped onion
  • 1 small garlic clove, chopped
  • ¾ cup chopped broccoli
  • ½ cup chicken broth
  • ¼ cup heavy cream
  • ⅓ cup grated cheddar cheese (or you can use Gouda, Colby, or mozzarella cheese)
  • Salt and pepper

  1. Melt butter on low heat in a saucepan.
  2. Add the onion and garlic and stir. Increase heat to medium.
  3. Put in the broccoli and saute for a few minutes.
  4. Pour in the chicken stock and let the mix come to a boil. Reduce heat and simmer for 10 minutes or till broccoli is tender.
  5. Take it off from heat and either blend it using a blender or an immersion blender to do it in the pan.
  6. When it is smooth, put it back on the heat.
  7. Switch off the stove and slowly and gradually add the heavy cream and cheese, constantly stirring till the cheese melts and the soup thickens.
  8. Switch on the stove to warm the soup, adding salt and pepper.
  9. You can garnish this with more grated cheese before serving.
  10. You can remove some of the cooked broccoli florets before blending and add them at the end if you don’t like a creamy soup.
