A tasty, cheesy, and healthy lunch option – broccoli cheese soup.
Broccoli fits the keto diet perfectly as it contains just 5g of net carbs per cup.
Ingredients:
- 2 tsp butter
- 1 tbsp chopped onion
- 1 small garlic clove, chopped
- ¾ cup chopped broccoli
- ½ cup chicken broth
- ¼ cup heavy cream
- ⅓ cup grated cheddar cheese (or you can use Gouda, Colby, or mozzarella cheese)
- Salt and pepper

Instructions:
- Melt butter on low heat in a saucepan.
- Add the onion and garlic and stir. Increase heat to medium.
- Put in the broccoli and saute for a few minutes.
- Pour in the chicken stock and let the mix come to a boil. Reduce heat and simmer for 10 minutes or till broccoli is tender.
- Take it off from heat and either blend it using a blender or an immersion blender to do it in the pan.
- When it is smooth, put it back on the heat.
- Switch off the stove and slowly and gradually add the heavy cream and cheese, constantly stirring till the cheese melts and the soup thickens.
- Switch on the stove to warm the soup, adding salt and pepper.
- You can garnish this with more grated cheese before serving.
- You can remove some of the cooked broccoli florets before blending and add them at the end if you don’t like a creamy soup.
