When the sauce is made with parmesan cheese, unsweetened almond milk, and heavy cream, this simple dish becomes a rich, creamy, keto vegetarian treat.

Ingredients: 

  • ½ small broccoli, cut into florets 
  • 1 clove garlic, minced  
  • 4 tbsp parmesan cheese, grated 
  • 2 tsp olive oil 
  • 1½ tbsp unsweetened almond milk
  • 1 pinch salt
  • 1 pinch ground black pepper
  • 1 tbsp fresh parsley, chopped
  • 2 tbsp heavy cream, 36% fat 
  • 1 pinch ground paprika

Instructions: 

  1. Place the broccoli in a steamer basket and place it in a saucepan of water, making sure the water does not reach the steamer basket (or use a pot with a metal strainer or colander). Bring the water to a boil, reduce the heat to a simmer, and cover the pot. Steam the broccoli for 5 minutes or until crisp-tender.
  2. Meanwhile, heat the olive oil in a saucepan. Add the heavy cream, almond milk, parmesan cheese, garlic, salt, ground black pepper, and ground paprika, and cook until the cheese mixture is smooth.
  3. Place the broccoli in a serving bowl and top with the cheese mixture. Toss well and sprinkle with parsley. Enjoy!

NOTE: Feel free to use frozen vegetables.
