Broccoli and cheese sauce is a match made in heaven.
When the sauce is made with parmesan cheese, unsweetened almond milk, and heavy cream, this simple dish becomes a rich, creamy, keto vegetarian treat.
Ingredients:
- ½ small broccoli, cut into florets
- 1 clove garlic, minced
- 4 tbsp parmesan cheese, grated
- 2 tsp olive oil
- 1½ tbsp unsweetened almond milk
- 1 pinch salt
- 1 pinch ground black pepper
- 1 tbsp fresh parsley, chopped
- 2 tbsp heavy cream, 36% fat
- 1 pinch ground paprika

Instructions:
- Place the broccoli in a steamer basket and place it in a saucepan of water, making sure the water does not reach the steamer basket (or use a pot with a metal strainer or colander). Bring the water to a boil, reduce the heat to a simmer, and cover the pot. Steam the broccoli for 5 minutes or until crisp-tender.
- Meanwhile, heat the olive oil in a saucepan. Add the heavy cream, almond milk, parmesan cheese, garlic, salt, ground black pepper, and ground paprika, and cook until the cheese mixture is smooth.
- Place the broccoli in a serving bowl and top with the cheese mixture. Toss well and sprinkle with parsley. Enjoy!
NOTE: Feel free to use frozen vegetables.
