Rich in healthy fats, protein, and fiber, it’s a great option for a quick and healthy low-carb meal.

Ingredients:

  • 2 medium eggs
  • 2 pinches salt
  • 2 pinches ground black pepper
  • 1½ tbsp olive oil
  • ⅔ cup cherry tomato, halved
  • 1 cup lettuce, chopped
  • 3 tbsp parmesan cheese, grated
  • 1 tbsp lemon juice

Instructions:

  1. Boil the eggs in a saucepan of simmering water for 10 minutes. Drain, cool under cold running water, peel, and cut into quarters. 
  2. Add eggs to a serving plate together with halved cherry tomatoes, chopped lettuce, and grated parmesan cheese. Season with salt and ground black pepper and drizzle with olive oil and lemon juice. Mix everything together and enjoy!
