Blue Cheese Zoodles Recipe

Ingredients: 

  • 2/4 cup green beans, chopped 
  • 3/4 cup blue cheese, crumbled 
  • 2 tbsp fresh parsley, chopped
  • 1 small zucchini 
  • 4 tbsp cup heavy cream, 36% fat 
  • 3 pinches onion powder

Instructions: 

  1. Cut the zucchini into thin noodle-like strips, or use a vegetable spiralizer or peeler. Place the zucchini in a colander and blanch by pouring boiling water over it.
  2. Place the green beans in a steamer (or use a pot with a metal strainer or colander) and steam for about 3 minutes or until tender.
  3. In a pan over low heat, melt the blue cheese, add the heavy cream and onion powder, and stir well.
  4. Add the green beans and zucchini noodles and stir until the noodles are well coated with the sauce.
  5. Transfer onto a plate, sprinkle with parsley, and enjoy!

*NOTE: Feel free to use frozen green beans.
