Bacon Salad Recipe

Ingredients: 

  • ½ medium bell pepper, sliced
  • 1 cup spinach
  • ½ small avocado, chopped
  • 2 tsp olive oil
  • 45g bacon, raw
  • 1 pinch salt
  • 1 pinch ground black pepper
  • ½ tbsp lemon juice

Instructions: 

  1. Heat a frying pan over medium-high heat. Add sliced bacon and fry until crispy. Remove from the pan and set aside.
  2. Meanwhile, heat half of the olive oil in a separate pan over medium heat. Add bell pepper and cook for 3–5 min until softened.
  3. Mix together the remaining olive oil, lemon juice, salt, and ground black pepper.
  4. In a serving bowl, add spinach, avocado, bacon, and bell pepper. Drizzle with the dressing and mix well. Enjoy!
