Avocado, Egg and Broccoli Salad Recipe

Avocado is the perfect replacement for dairy products in this recipe, making a creamy, zesty dressing that makes this salad the ideal dairy-free side dish for any meal.

Ingredients: 

  • ⅓ medium cucumber, chopped
  • 1 small avocado, chopped 
  • 3–4 medium broccoli florets, chopped 
  • ½ cup spinach
  • 2 small eggs 
  • 1 tsp olive oil 
  • 1 tsp mayonnaise 
  • 1 tsp lime juice
  • 1 pinch salt 
  • 1 pinch ground black pepper
  • ½ tsp nutritional yeast 
  • 1 tsp mustard

Instructions: 

  1. Bring a pan of water to a boil. Then add the eggs and simmer for 10 minutes. Cool under cold water and peel.
  2. Meanwhile, mash half the avocado with lime juice, salt, mustard, and mayonnaise. Leave the rest of the avocado to be chopped into a salad.
  3. Add the rest of the avocado, broccoli, spinach, cucumber, and eggs into a salad bowl. Add avocado and mustard sauce and mix all the ingredients well to combine.
  4. Garnish the salad with ground black pepper, nutritional yeast, and olive oil. Enjoy!
