Avocado and mayonnaise are perfect for creating a deliciously rich and creamy chicken salad. Enjoy it in different ways: wrap it in tortilla or lettuce, eat it alone, or with a keto bread toast.

Ingredients:

  • 2 cooked chicken breasts, shredded
  • 2 avocados, cubed
  • 1/4 red onion, diced
  • 1/4 cup mayonnaise
  • Dill, chopped
  • Cilantro, chopped
  • Lime juice
  • Garlic powder, to taste
  • Salt, to taste

Instructions:

  1. Add mayonnaise to a bowl.
  2. Mix in garlic powder, salt, lime juice, and chopped herbs.
  3. Put in shredded chicken breasts, red onion, and avocado.
  4. Mix until avocado cubes are mostly broken down. For a chunkier texture, don’t mix it too thoroughly.
  5. Eat from the bowl or serve it inside lettuce wraps or a low-carb tortilla.
  6. If using it for meal prep, make sure to cover the bowl with cling wrap to prevent browning.
