Ingredients: 

  • 1 medium egg
  • 1 drop vanilla extract
  • 2 tbsp blueberries 
  • 3 tbsp almond milk, unsweetened 
  • 3 tbsp almond flour 
  • 1 tbsp olive oil 
  • 1 tbsp vanilla protein powder 
  • 3 drops stevia liquid 
  • 2 tsp psyllium husk powder 
  • 1 pinch salt

Instructions: 

  1. In a bowl, whisk together the egg, almond milk, almond flour, vanilla protein powder, a pinch of salt, stevia liquid, and vanilla extract until well combined.
  2. Stir in the psyllium husk powder. Allow the mixture to thicken for 10–15 minutes. 
  3. Heat the olive oil in a non-stick frying pan over medium heat. Pour about 2–2.5 tablespoons of batter per pancake into the frying pan. Cook for 2–3 minutes on each side until bubbles form on the surface. Flip the pancakes and cook for a further 2–3 minutes or until browned.
  4. Serve the pancakes on a plate topped with blueberries, and enjoy!
