Almond Flour Pancakes With Peanut Butter Recipe

Ingredients: 

  • ⅕ cup almond milk, unsweetened
  • 3 tbsp almond flour
  • 1 medium egg
  • ¼ tsp baking powder
  • 2 drops vanilla extract
  • 3 drops stevia liquid
  • 1 pinch salt
  • ½ tbsp olive oil
  • 1 tbsp peanut butter
  • 2 tsp psyllium husk powder

Instructions: 

  1. Whisk egg, almond milk, almond flour, vanilla extract, stevia, and salt together in a bowl until well combined. Adjust consistency by pouring more water if necessary.
  2. Mix in the psyllium husk powder. Let the mixture sit for 5–10 minutes to thicken up. Then, mix in the baking powder.
  3. Heat olive oil in a nonstick frying pan over medium-low to medium heat. Add the batter to the hot pan and form into circles. Cover and cook for about 2 minutes, until bubbles start to form. Flip and cook for another 1–2 minutes, until browned on the other side. Repeat with the rest of the batter.
  4. Serve the pancakes on a plate with peanut butter. Enjoy!
