Ingredients:
- ⅕ cup almond milk, unsweetened
- 3 tbsp almond flour
- 1 medium egg
- ¼ tsp baking powder
- 2 drops vanilla extract
- 3 drops stevia liquid
- 1 pinch salt
- ½ tbsp olive oil
- 1 tbsp peanut butter
- 2 tsp psyllium husk powder

Instructions:
- Whisk egg, almond milk, almond flour, vanilla extract, stevia, and salt together in a bowl until well combined. Adjust consistency by pouring more water if necessary.
- Mix in the psyllium husk powder. Let the mixture sit for 5–10 minutes to thicken up. Then, mix in the baking powder.
- Heat olive oil in a nonstick frying pan over medium-low to medium heat. Add the batter to the hot pan and form into circles. Cover and cook for about 2 minutes, until bubbles start to form. Flip and cook for another 1–2 minutes, until browned on the other side. Repeat with the rest of the batter.
- Serve the pancakes on a plate with peanut butter. Enjoy!
