Ingredients:
For the salad:
- 1/2 head of Romaine lettuce, chopped
- 1 chicken breast
- 2 hard-boiled eggs
- 1/4 cup parmesan cheese, grated
- 6 bacon strips
For the dressing:
- 1/2 cup mayonnaise
- 1/2 lemon, squeezed
- 1 tbsp Dijon mustard
- 1 tbsp olive oil
- Salt, to taste
- Black pepper, to taste
Instructions:
- Add eggs to a pot of boiling water for 10 minutes. Peel and slice in two once done.
- Rub the chicken breast with a little olive oil and season with salt and pepper to taste.
- Place the pan over medium heat until hot, and cook the chicken for 5 minutes on each side.
- Cook your bacon until crispy. Break it into small pieces once done.
- Chop the Romaine lettuce and set it as the base in a bowl.
- Evenly spread the bacon bits and parmesan over the lettuce, and place the eggs and sliced chicken after.
- Mix all the dressing ingredients thoroughly in a single bowl. Spread over the salad, and toss gently.
