Ingredients:
- 1 cup raspberries
- ¼ cup heavy cream
- ¼ cup water
- Monk fruit sweetener, to taste
- 1 tsp vanilla extract
- ¼ tsp xanthan gum
- ½ cup full-fat cottage cheese

How to prepare:
- In a small saucepan, combine the raspberries, heavy cream, water, monk fruit sweetener, and vanilla extract to begin making your keto breakfast without eggs.
- Heat over medium heat, stirring occasionally until the mixture comes to a boil.
- Reduce the heat to low and simmer for 5 minutes.
- Remove from heat and add the xanthan gum, whisking until completely dissolved.
- Place the cottage cheese in a food processor or blender and pulse until smooth.
- Add the raspberry mixture and blend until combined.
- Divide between 4 bowls and refrigerate for at least 30 minutes before serving.
