Pancakes made from keto ingredients are not any worse than the traditional ones. By topping them with cream cheese, berries, or sugar-free syrup you can make them one of your favorite breakfast options. 

Ingredients:

  • 1 cup almond flour
  • 1 cup coconut flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ tsp xanthan gum (or 2 eggs)
  • 1 cup unsweetened milk, almond or coconut
  • 3 tbsp butter, melted
  • 1 tbsp liquid stevia
  • 1 tsp vanilla extract
  • Toppings: Consider fresh berries, sugar-free syrup, or cream cheese essential toppings for keto pancake recipes.

How to prepare:

  1. Whisk together the dry ingredients: flour, coconut flour, baking powder, salt, and xanthan gum. 
  2. In a separate bowl, whisk together the wet ingredients: milk (almond or coconut), melted butter, stevia, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and mix until everything is well combined. If the batter is too thick, add more milk until it reaches your desired consistency.
  4. Heat a frying pan over medium heat and grease with butter or cooking spray.
  5. Scoop ¼ cup of batter onto the frying pan for each pancake. Cook for 2–3 minutes per side or until golden brown and cooked through.
  6. Decorate with cream cheese, berries, and sugar-free syrup.
  7. Serve your morning meal immediately.
