Coconut Granola Recipe

Playing around with different add-ins will let you enjoy this coconut granola as it would be a new recipe each time you make it. Try adding different seeds, use what you already have in your pantry. 

Ingredients:

  • 1 cup shredded coconut flakes
  • 1/2 cup pumpkin seeds
  • 1/2 cup sunflower seeds
  • 1/4 cup chia seeds
  • 1/4 cup flaxseed
  • 1/2 teaspoon ground cinnamon
  • A few pinches of salt 
  • 1/3 cup coconut oil, melted
  • 1/3 cup sugar-free maple syrup
  • 1 tablespoon vanilla extract

Instructions:

  1. Preheat the oven to 350°F/180°C and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine all the ingredients and mix until well combined.
  3. Spread the mixture onto the prepared baking sheet in an even layer.
  4. Bake for 10-15 minutes, stirring halfway through, until lightly golden brown.
  5. Before serving or storing in an airtight container, let it cool down.
