Ingredients:

  • 1 small tomato, chopped 
  • ¼ red onion, sliced
  • ½ cup lettuce, chopped
  • ½ medium cucumber, chopped
  • 1½ tbsp olive oil 
  • 3 eggs 
  • 1 tbsp lemon juice 
  • Salt, a pinch 
  • Ground black pepper, a pinch

Instructions:

1. Boil the eggs in a pot with simmering water for about 10min. Cool, peel, and slice in half.
2. In a bowl, combine the olive oil, lemon juice, salt, and ground black pepper.
3. Serve eggs in a serving bowl together with lettuce, red onion, tomato, and cucumber. Drizzle the dressing over the vegetables. Enjoy!
