Spinach Salad With Chicken Recipe

Serve sliced chicken filet on a bed of spinach and sliced bell peppers for a weeknight meal that takes only minutes to prepare.

Ingredients: 

  • 1 small bell pepper, sliced
  • 2 tbsp olive oil
  • 2 pinches salt
  • 2 pinches ground black pepper
  • 3.5oz/100g chicken breast, raw
  • 1 pinch dried basil
  • 1½ cup spinach 
  • 2 tsp lemon juice 
  • 1 pinch dried oregano

Instructions:

  1. Season the chicken with a pinch of salt, ground black pepper, and dried oregano. 
  2. Heat half of the olive oil in a frying pan over medium heat. Add chicken and cook for 4–5 minutes on each side or until golden brown and no longer pink inside.
  3. Assemble spinach, bell pepper, and sliced chicken on a plate. Drizzle with the remaining olive oil and lemon juice. Season with a pinch of salt, ground black pepper, and dried basil. Mix everything and enjoy!
