Keto Salad With Chicken and Bell Pepper Recipe

Ingredients: 

  • ½ small bell pepper, sliced 
  • 2 tbsp olive oil 
  • 2 pinches salt 
  • 2 pinches ground black pepper 
  • 5 medium cherry tomatoes, halved 
  • 3.2oz/90g chicken breast, raw 
  • 1 pinch basil, dried  
  • 1 cup spinach

Instructions: 

  1. Season the chicken breast with a pinch of salt and ground black pepper. 
  2. Heat half of the olive oil in a frying pan over medium heat. Add the chicken breast and cook for about 4–5 minutes on each side or until golden brown and no longer pink inside. 
  3. Assemble spinach, cherry tomatoes, bell pepper, and sliced chicken on a plate. Drizzle with the remaining olive oil and season with a pinch of salt, ground black pepper, and dried basil. Mix everything and enjoy!
