A plate full of fresh vegetables and bright colors gives you an antioxidant boost along with your dietary fiber. Add sliced cooked chicken for protein, and you get a keto meal fit for a king.
Ingredients:
- ½ small bell pepper, sliced
- 2 tbsp olive oil
- 2 pinches salt
- 2 pinches ground black pepper
- 5 medium cherry tomatoes, halved
- 3.2oz/90g chicken breast, raw
- 1 pinch basil, dried
- 1 cup spinach

Instructions:
- Season the chicken breast with a pinch of salt and ground black pepper.
- Heat half of the olive oil in a frying pan over medium heat. Add the chicken breast and cook for about 4–5 minutes on each side or until golden brown and no longer pink inside.
- Assemble spinach, cherry tomatoes, bell pepper, and sliced chicken on a plate. Drizzle with the remaining olive oil and season with a pinch of salt, ground black pepper, and dried basil. Mix everything and enjoy!
