The ultimate keto version of your favorite Chinese takeout. It tastes so great, you won’t believe it’s low-carb.
Ingredients:
- ⅓ cup almond flour
- 1 tsp baking powder
- 1 large egg, lightly beaten
- 2 tbsp cold club soda
- 1lb/450g pork loin steak, cubed
- ¼ tsp salt
- ¼ cup green bell peppers, diced
- ¼ cup red bell peppers, diced
- Oil for frying (olive, canola, coconut, or sesame)
- 2 scallions, thinly sliced
- ½ tbsp sesame seeds
Sweet and Sour Sauce:
- ⅓ cup sherry vinegar
- ½ tsp stevia liquid
- ¼ cup tomato puree
- 1 tsp peanut oil
- 2 tbsp butter
- 1 tsp garlic powder
- ¼ cup water
- 1 tsp psyllium husk

Instructions:
- Mix together the almond flour, baking powder, egg, and club soda to make a batter.
- Heat the oil in a medium-sized frying pan over medium-high heat. It is ready for frying when a drop of batter sizzles when you drop it into the oil.
- Season the pork with salt and pepper to taste. Cover the pieces in batter and fry in batches for 8–10 minutes or until crispy and golden brown. Drain on a paper towel.
- To make the sauce: Add the sherry vinegar, stevia liquid, tomato puree, peanut oil, butter, garlic powder, and water to a small saucepan, mix well, and bring to a boil. Once boiling, remove from the heat, add the psyllium husk, stir it into the sauce, and set aside.
- Heat oil in a large saucepan and fry the green and red bell peppers until cooked. Add the crispy pork and the sauce and toss to combine.
- Serve over cauliflower rice topped with sesame seeds and scallions.
