Ingredients:
- 1 tbsp olive oil
- 2oz/60g chorizo
- ½ small red onion, diced
- 2 large eggs
- 2 tbsp heavy cream
- ¼ cup baby spinach, chopped
- 1oz/28g shredded cheddar cheese
- Salt and pepper to taste

Toppings:
- 1 tbsp cream cheese
- ¼ avocado, diced
- ½ cup cherry tomatoes, halved
Instructions:
- Heat the olive oil in a medium-sized frying pan and cook the chorizo, stirring frequently.
- Add the onion to the pan and cook while stirring until the onion is soft.
- Meanwhile, in a bowl, whisk together the eggs and heavy cream.
- Remove the chorizo and onion from the pan and set aside.
- Pour the egg mixture into the same frying pan and cook at low to medium heat until the egg is almost set.
- Add the spinach to half the omelet and cover with a lid until wilted, then add the chorizo and onion, and top with shredded cheese.
- Fold one side of the omelet over the other and place it on a plate.
- Top with cream cheese, avocado, and cherry tomatoes.
