Tuna and eggs – the dynamic duo of the food world. Add some veggies, and you've got a perfect speed keto meal.
Ingredients:
- ¼ small red onion, sliced
- ½ small cucumber, chopped
- 1 cup spinach
- ½ small avocado, chopped
- 1 tbsp sesame seeds
- 1½ tbsp olive oil
- 1 egg
- 1 pinch salt
- 1 pinch ground black pepper
- ½ tbsp lemon juice
- 4 cherry tomatoes, halved
- 1 tuna, canned in water
- 2 tbsp fresh dill, chopped

Instructions:
- Place the egg/eggs into a saucepan, cover with cold water, and place over high heat. Bring it to a boil, then reduce the heat to low and simmer for about 4–5 minutes (cook for a little longer if you prefer the egg/eggs to be medium done). Cool, peel, and slice in half.
- Meanwhile, mix together olive oil, lemon juice, dill, salt, and ground black pepper in a bowl.
- In a serving bowl, add spinach, red onion, avocado, cucumber, cherry tomatoes, tuna, and egg/eggs. Drizzle with the dressing and toss to combine. Sprinkle with sesame seeds, and enjoy!
