A perfect combination of the fresh and vibrant flavors of bell pepper and zucchini with the rich and flaky texture of salmon.
Ingredients:
- 3 tbsp olive oil
- 2 pinches ground black pepper
- 2 pinches salt
- 1 small zucchini, sliced
- 170g/6oz salmon filet, raw
- 1½ tbsp lemon juice
- 1 large bell pepper, chopped
- 1 tbsp fresh parsley, chopped
- 4 leaves fresh basil
- 1 pinch garlic powder
- 1 pinch smoked paprika

Instructions:
- Cut salmon into approximately 1in/2.5cm wide pieces.
- Combine salmon pieces, zucchini slices, and bell pepper pieces with olive oil, salt, ground black pepper, smoked paprika, and garlic powder, or use your favorite spices instead.
- Thread salmon, bell pepper, and zucchini onto each skewer.
- Preheat the grill or a grill pan to medium-high heat. Place skewers and cook for 6–8 minutes on each side or until the salmon flakes easily and the vegetables are nicely browned.
- Serve salmon skewers on a plate. Drizzle with lemon juice, top with basil and parsley, and enjoy!
