A warm and satisfying tofu and avocado salad that will make you feel full and fuel your body with healthy fats.
Ingredients:
- 135g/4.7oz tofu
- 1 tbsp olive oil
- 2 tsp lemon juice
- 1 pinch salt
- 1 pinch ground black pepper
- 1 small avocado, chopped
- 1 pinch smoked paprika
- 1 tbsp chia seeds
- 2 pinches dried oregano

Instructions:
- Cut tofu into cubes.
- Season tofu cubes with salt, ground black pepper, dried oregano, and smoked paprika.
- Heat half of the olive oil in a non-stick frying pan over medium heat. Add the tofu to the pan and fry for 3–4 minutes on each side until crispy.
- Assemble avocado and fried tofu on a serving plate. Drizzle with the remaining olive oil and lemon juice, and sprinkle chia seeds on top. Enjoy!
