Crispy tofu in peanut and tamari glaze served over low-carb cauliflower rice – a complete, protein-packed meal in just 15 minutes.
Ingredients:
- ½ cup chopped cauliflower
- ½ cup tofu, cubed
- 1 tsp olive oil
- 2 tsp peanut butter
- 1 tsp chopped fresh cilantro
- 2 tsp sesame oil
- 2 tsp tamari
- 1 pinch chili powder
- 1 tsp sesame seeds

Instructions:
- Drain off the excess liquid of the tofu and slice it into small cubes.
- In a bowl, mix together peanut butter, sesame oil, tamari, and chili powder (optional). Add tofu, toss to coat, and set aside.
- Place chopped cauliflower in a food processor and pulse until the mixture resembles rice.
- Heat olive oil in a non-stick frying pan over medium heat. Add cauliflower rice and cook for 3–5 minutes, then remove and set aside.
- To the same pan, add tofu with peanut butter sauce and fry for 3–4 minutes on each side until crispy.
- Place crispy tofu cubes in a bowl. Sprinkle with sesame seeds and cilantro. Serve with cauliflower rice, and enjoy!
*NOTE: Feel free to use frozen vegetables.
