Ingredients:
- 2/4 cup green beans, chopped
- 3/4 cup blue cheese, crumbled
- 2 tbsp fresh parsley, chopped
- 1 small zucchini
- 4 tbsp cup heavy cream, 36% fat
- 3 pinches onion powder

Instructions:
- Cut the zucchini into thin noodle-like strips, or use a vegetable spiralizer or peeler. Place the zucchini in a colander and blanch by pouring boiling water over it.
- Place the green beans in a steamer (or use a pot with a metal strainer or colander) and steam for about 3 minutes or until tender.
- In a pan over low heat, melt the blue cheese, add the heavy cream and onion powder, and stir well.
- Add the green beans and zucchini noodles and stir until the noodles are well coated with the sauce.
- Transfer onto a plate, sprinkle with parsley, and enjoy!
*NOTE: Feel free to use frozen green beans.
