Thinly sliced zucchini is the perfect alternative to pasta in this baked cannelloni-style dish. Stuffed with mozzarella and feta cheese and topped with tangy tomatoes, it is lip-smackingly delicious.
Ingredients:
- 1 cup canned tomatoes
- ⅓ cup feta cheese, crumbled
- 1 pinch ground black pepper
- 2 pinches dried oregano
- 1 large zucchini
- 6 fresh basil leaves
- ⅔ cup mozzarella cheese, shredded, whole-milk
- 4 tsp olive oil

Instructions:
- Preheat the oven to 425°F/220°C.
- Using a vegetable peeler peel the zucchini into wide strips. Lay them flat on the surface and add feta, mozzarella, oregano, and ground black pepper. Roll them.
- Coat oven-safe skillet with olive oil. Add the zucchini rolls and pour the canned tomatoes over the top. Bake for 10 minutes.
- Once done, transfer onto a plate, garnish with basil leaves, and enjoy!
