Creamy risotto on the keto diet becomes possible when you replace high-carb arborio rice with cauliflower rice.
Creamy, cheesy, and delicious; it’s sure to become a favorite.
Ingredients:
- 1 small cauliflower, cut into florets
- ⅔ cup parmesan cheese, grated
- 1 tbsp butter
- 1 tsp lemon juice
- ⅓ cup heavy cream, 36% fat
- 1 pinch onion powder
- 1 pinch salt
- 1 pinch ground black pepper

Instructions:
- Chop the cauliflower florets finely with a sharp knife.
- Heat a skillet over medium-high heat. Add heavy cream, butter, onion powder, and lemon juice, and cook for about 3–5 minutes.
- Add the chopped cauliflower and continue to simmer, stirring frequently, for 8–10 minutes. Season with salt and ground black pepper.
- Add the grated parmesan cheese and stir until melted.
- Serve in a bowl. Enjoy!
*NOTE: Feel free to use frozen vegetables.
