Ingredients:
- 1 clove garlic, minced
- 1½ cup cauliflower, in florets
- 2 tbsp olive oil
- 2 medium egg s
- 2 pinches salt
- 2 pinches ground black pepper
- 1 tbsp fresh parsley, chopped
- 1 pinch chili flakes
- 1 pinch smoked paprika
- 4 tbsp parmesan cheese, grated

Instructions:
- Boil the cauliflower florets in a pot filled with water for 5–6 minutes or until tender. Drain.
- In a bowl, beat the eggs with salt, ground black pepper, smoked paprika, and chili flakes (optional). Mix in grated parmesan cheese.
- Heat olive oil in a pan on medium heat. Add minced garlic and cook for 30 seconds. Add cauliflower florets and cook, occasionally stirring, for 5 minutes or until golden.
- Pour the egg mixture over the cauliflower and mix everything together. Cook for 3 minutes, stirring, or until eggs are set. Top with chopped parsley. Enjoy!
