Zoodles With Parmesan and Pumpkin Seeds Recipe

Ingredients: 

  • 1 tbsp chopped onion 
  • 2 cloves minced garlic
  • ½ cup parmesan cheese, grated 
  • 2½ tbsp olive oil
  • 2 pinches salt 
  • 2 pinches ground black pepper 
  • 1 large zucchini 
  • 2 tbsp pumpkin seeds 
  • 1 cup arugula leaves 
  • 1½ tbsp lime juice

Instructions: 

  1. Cut zucchini into thin, noodle-like strips, or use a vegetable spiralizer. Toss with salt and place in a colander to drain for 10 minutes.
  2. Heat half of the olive oil in a nonstick frying pan over medium heat. Add garlic and onion and cook for 30 seconds.
  3. Add zucchini noodles and fry for 2–3 minutes. Season with salt and ground black pepper. Add grated parmesan cheese and stir well.
  4. Serve in a bowl with arugula leaves. Sprinkle pumpkin seeds on top and drizzle with remaining olive oil and lime juice. Enjoy!

*NOTE: Feel free to adjust the seasoning to your taste or use your favorite spices instead.
