Marinated tofu with a spinach and bell pepper salad – nothing can be better than this!
The freshness of the salad with the crunchiness of the tofu combines to create a salad better than at any restaurant!
Ingredients:
- 125g/4.4oz tofu
- 1 tbsp sesame seeds
- 1 tbsp olive oil
- 2 tsp lemon juice
- 1 pinch salt
- 1 pinch ground black pepper
- ½ small cucumber, sliced
- ½ medium avocado, chopped
- ½ cup spinach
- ½ medium bell pepper, chopped
- 4 medium cherry tomatoes, quarters
- 4 leaves basil, fresh
- 1 pinch paprika, smoked

Instructions:
- Cut tofu into cubes. Season tofu cubes with salt, ground black pepper, and smoked paprika.
- Heat half of the olive oil in a nonstick frying pan over medium heat. Add the tofu to the pan and fry for 3–4 minutes on each side until crispy.
- Assemble spinach, cherry tomatoes, bell pepper, cucumber, avocado, and fried tofu in a bowl. Drizzle with the remaining olive oil and lemon juice, sprinkle sesame seeds on top, and garnish with basil leaves. Enjoy!
