Instead of Chinese takeout, try our cauliflower rice with eggs and spinach. This low-carb version is healthier and, let’s be honest, tastier!
Ingredients:
- 1½ cup cauliflower, in florets
- 1½ tbsp olive oil
- 2 pinches salt
- 2 pinches ground black pepper
- 1 pinch garlic powder
- 2 medium egg s
- 1 medium stalk celery, chopped
- ½ cup spinach
- 4 leaves basil, fresh

Instructions:
- Add the cauliflower florets into a food processor and pulse until the mixture resembles rice, or grate it using a box grater.
- Heat half of the olive oil in a pan over medium heat. Crack the eggs straight into the pan and cook for about 2–3 minutes or until the desired doneness. Season with salt and ground black pepper.
- Meanwhile, add the remaining olive oil to another pan. Add prepared cauliflower and celery and season with a pinch of salt, ground black pepper, and garlic powder. Cook for 1–2 minutes until heated through.
- In a serving bowl, mix cauliflower rice and celery with spinach. Top with fried eggs and basil leaves, and enjoy!
