Cauliflower Rice With Eggs and Spinach Recipe

Instead of Chinese takeout, try our cauliflower rice with eggs and spinach. This low-carb version is healthier and, let’s be honest, tastier!

Ingredients: 

  • 1½ cup cauliflower, in florets
  • 1½ tbsp olive oil
  • 2 pinches salt
  • 2 pinches ground black pepper
  • 1 pinch garlic powder
  • 2 medium egg s
  • 1 medium stalk celery, chopped
  • ½ cup spinach
  • 4 leaves basil, fresh

Instructions: 

  1. Add the cauliflower florets into a food processor and pulse until the mixture resembles rice, or grate it using a box grater.
  2. Heat half of the olive oil in a pan over medium heat. Crack the eggs straight into the pan and cook for about 2–3 minutes or until the desired doneness. Season with salt and ground black pepper.
  3. Meanwhile, add the remaining olive oil to another pan. Add prepared cauliflower and celery and season with a pinch of salt, ground black pepper, and garlic powder. Cook for 1–2 minutes until heated through.
  4. In a serving bowl, mix cauliflower rice and celery with spinach. Top with fried eggs and basil leaves, and enjoy!
