Try out this amazing fried tofu and avocado salad for the perfect balance of nutrients and protein. Ideal for those trying a plant-based keto meal plan.
Ingredients:
- 165g/5.8oz tofu
- 1½ tbsp sesame seeds
- 1 tbsp olive oil
- 2 tsp lemon juice
- 2 tsp tamari
- 1 pinch salt
- 1 pinch ground black pepper
- 1 cup lettuce, chopped
- ½ medium cucumber, sliced
- 2 tbsp fresh cilantro, chopped
- 1 medium avocado, chopped
- 5 medium cherry tomatoes, quarters

Instructions:
- Cut the tofu into cubes.
- In a bowl, mix tamari sauce, lemon juice, and tofu cubes. Season with salt and ground black pepper.
- Heat half of the olive oil in a nonstick frying pan over medium heat. Add the tofu to the pan and fry for 3–4 minutes on each side until crispy.
- Assemble lettuce leaves, cherry tomatoes, cucumber, avocado, and fried tofu in a bowl. Drizzle with the remaining olive oil and sprinkle chopped cilantro and sesame seeds on top. Enjoy!
