This cucumber, bell pepper, and parmesan salad is so easy to make you’ll have it as you go-to whenever you need something quick and healthy!
Ingredients:
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 pinch salt
- 1 pinch ground black pepper
- ¼ small red onion, chopped
- 1 small cucumber, chopped
- ½ medium bell pepper, chopped
- 1 tbsp fresh parsley, chopped
- 1 cup lettuce, chopped
- ½ cup parmesan cheese, grated

Instructions:
- Add red onion, cucumber, bell pepper, and lettuce to a serving plate.
- Drizzle with olive oil and lemon juice, season with salt and ground black pepper, and add grated parmesan cheese on top. Garnish with chopped parsley, and enjoy!
