Imagine biting into a juicy cherry tomato mixed with some arugula salad and topped with a bite of a creamy omelet. Now quit imagining it and try this recipe!
Ingredients:
- 1½ tbsp olive oil
- 2 cups arugula leaves
- ½ cup almond milk, unsweetened
- 3 medium eggs
- 2 pinches salt
- 2 pinches ground black pepper
- 1 tsp lemon juice
- 1 cup cherry tomatoes, halved

Instructions:
- In a bowl, whisk the eggs. Combine with almond milk. Season with a pinch of salt and ground black pepper.
- Heat half the amount of olive oil in a nonstick frying pan over medium heat. Pour whisked eggs into the pan and cook for a minute. Add half the amount of cherry tomatoes into the pan and continue cooking until the eggs are set.
- Meanwhile, in a bowl, combine arugula leaves with the rest of the cherry tomatoes. Add a pinch of salt and ground black pepper. Drizzle with the rest of the olive oil and lemon juice. Toss the salad well.
- Serve the omelet on a plate with arugula salad on the side. Enjoy!
