Cherry Tomato Omelet With Arugula Salad Recipe

Ingredients: 

  • 1½ tbsp olive oil
  • 2 cups arugula leaves
  • ½ cup almond milk, unsweetened
  • 3 medium eggs
  • 2 pinches salt
  • 2 pinches ground black pepper
  • 1 tsp lemon juice
  • 1 cup cherry tomatoes, halved

Instructions: 

  1. In a bowl, whisk the eggs. Combine with almond milk. Season with a pinch of salt and ground black pepper.
  2. Heat half the amount of olive oil in a nonstick frying pan over medium heat. Pour whisked eggs into the pan and cook for a minute. Add half the amount of cherry tomatoes into the pan and continue cooking until the eggs are set.
  3. Meanwhile, in a bowl, combine arugula leaves with the rest of the cherry tomatoes. Add a pinch of salt and ground black pepper. Drizzle with the rest of the olive oil and lemon juice. Toss the salad well.
  4. Serve the omelet on a plate with arugula salad on the side. Enjoy!
