Nothing is more versatile in the ketogenic diet than cauliflower. Serve cauliflower rice with fried chicken and vegetables for a low-carb version of a classic chicken and rice meal.
Ingredients:
- 3 tbsp olive oil
- 2 pinches salt
- 2 pinches ground black pepper
- 100g/3.5oz chicken breast, raw
- ½ small tomato, wedges
- ½ medium bell pepper, chopped
- 2 cloves garlic, minced
- ¾ cup cauliflower, florets
- 2 tbsp fresh cilantro, chopped

Instructions:
- Add cauliflower florets into a food processor and pulse until the mixture resembles rice.
- Heat half of the olive oil in a pan or wok over medium-high heat. Add the chicken pieces and season with salt and ground black pepper. Cook for 5–6 minutes, occasionally stirring until chicken is golden and cooked through.
- Remove chicken from the pan, set aside, and cover to keep warm.
- Heat the remaining olive oil in the same pan. Add the garlic and saute for about 1 minute, until fragrant. Add bell pepper and cauliflower rice and cook for 2–3 minutes until cooked through.
- Place tomato wedges, chicken, and cauliflower rice with bell pepper onto a plate. Sprinkle chopped cilantro on top. Enjoy!
