Is chicken salad a staple lunchtime meal for you on the keto diet?
Change it up a bit by serving your salt and pepper seasoned fried chicken pieces on a bed of fresh spinach and chopped cucumber, topped with peanuts.
Ingredients:
- 1 small cucumber, sliced
- 1½ cup spinach
- 3 tbsp unsalted peanuts, chopped
- 2 tbsp olive oil
- 2 pinches salt
- 1 tbsp lemon juice
- 80g/2.8oz chicken breast, raw
- 2 pinches ground black pepper

Instructions:
- Season the chicken with salt and ground black pepper.
- Heat half the amount of olive oil in a pan over medium heat. Add the chicken breast to the pan and cook for about 5 minutes on each side or until cooked through. Remove the chicken breast from the pan and slice it into bite-size pieces.
- On a plate, combine the chicken with cucumber slices, spinach leaves, and peanuts. Drizzle with the remaining olive oil and lemon juice. Serve and enjoy!
*NOTE: Feel free to adjust the seasoning to your taste or use your favorite spices instead.
