You won’t be able to get enough of this lip-smacking salad. Fried bacon and bell peppers are tossed together with fresh spinach and avocado for a low-carb, high-fat main meal.
Ingredients:
- ½ medium bell pepper, sliced
- 1 cup spinach
- ½ small avocado, chopped
- 2 tsp olive oil
- 45g bacon, raw
- 1 pinch salt
- 1 pinch ground black pepper
- ½ tbsp lemon juice

Instructions:
- Heat a frying pan over medium-high heat. Add sliced bacon and fry until crispy. Remove from the pan and set aside.
- Meanwhile, heat half of the olive oil in a separate pan over medium heat. Add bell pepper and cook for 3–5 min until softened.
- Mix together the remaining olive oil, lemon juice, salt, and ground black pepper.
- In a serving bowl, add spinach, avocado, bacon, and bell pepper. Drizzle with the dressing and mix well. Enjoy!
